The Onano lentil boasts an ancient tradition dating back at least to the 16th century. Already mentioned in the city statutes in 1561, its fame spread in the mid-19th century. It received recognition in Italy and abroad at several international exhibitions: in Rome and Buenos Aires in 1910, and in London and Paris in 1911, during the Third International Exhibition of Modern Progress. During the week of August 15th each year, to promote the product, the Lentil Festival is held in Onano, a municipality in the Alta Tuscia Viterbese area.

It reminds me a lot of Ventotene lentils, and I use them in their vegetarian version. They're also excellent in a drier version, paired with rice, millet, or other grains.
