Ribollita is undoubtedly one of the most well-known dishes in Tuscan cuisine, reminiscent of minestrone soup due to the wide variety of vegetables used. The term ribollita means "boiled again" and refers to the fact that this dish was prepared using cooked vegetables left over from previous days' meals, which were recooked with stale bread, with a drizzle of olive oil added at the end.
