Fennel flowers are a product derived from one of the most common aromatic plants in our region. Wild fennel (Foeniculum vulgare) is harvested in summer, when the plant is in full bloom and displays yellow inflorescences, that is, before the ripe fruits (seeds) appear. The flowering umbels are cut and dried in the sun, then crushed in the hands to obtain a fine substance with a distinctive aroma and flavor. It is excellent on meat, porcini mushrooms, black olives seasoned with orange peel, or in rustic sauces.
