Farro del Pungolo di Acquapendente is a cereal grown in a small area by a few local farms, located in the municipality of Acquapendente, in the Alta Tuscia Viterbese.
It is said that way back in 1166, the people of Acquapendente were oppressed by the tyrant governor Frederick I Barbarossa. On a bright May day, a farmer, clearing weeds from his spelt field, heard the bell ringing to summon the enemy. The farmer had no weapons, but he had to fight: so he took the goad he had used so often to clean the plow and urge his oxen, and joined the others to regain freedom for himself and his city. After the victory, there was a great celebration and a parade of the goad adorned with flowers and spelt ears... From this event comes the name of this grain, so famous in upper Lazio.
Ingredients: emmer of the goad.
