The yellow "Second" or "Stuppia" bean was strictly sown in the last ten days of June, after the wheat harvest, to allow it to ripen around the end of August. Hence the names "secondo" bean, as it is a second-harvest product, and "Stoppia" bean, as it is sown on freshly processed wheat stubble. This product has been added to the basket of typical products of the Alta Tuscia Laziale Mountain Community.
