Barley is a very ancient grain, known in Pharaonic Egypt, Greece, and Rome. It was highly recommended by Hippocrates (the father of medicine) for all types of ailments due to its digestibility and high energy content. Pearling barley removes the first three layers of the hull: cooking times are reduced, but none of the essential nutrients are lost.
