We select the finest durum wheat semolina to offer our customers the highest quality and authenticity. The strictly artisanal production process involves a long kneading process, bronze die-casting, and slow drying at low temperatures.
Bronze-drawing creates a rough, porous surface for the pasta, ensuring it's highly permeable to the sauce, while slow, low-temperature drying preserves the ingredients' high nutritional value and keeps them firm during cooking.
We also use 25% category A eggs from free-range hens.
The result is an excellent pasta with a unique flavor and taste, just like homemade.
