Ingredients (for 4 people):
– Pearled spelt
– Fresh ricotta
– Mixed vegetables (carrots, courgettes, onion)
- Egg
– Breadcrumbs
– Grated Parmesan cheese
– Extra virgin olive oil
– Salt, pepper and spices to taste
Preparation:
Cook the farro in lightly salted water, drain, and let cool. Meanwhile, sauté the diced vegetables in a pan with a drizzle of oil. In a bowl, combine the farro, ricotta, vegetables, egg, Parmesan, and a little breadcrumbs. Season with salt and pepper, then shape into meatballs. Roll them in breadcrumbs and bake in a preheated oven at 200°C (400°F) for about 20 minutes, until golden brown.
