Pat them dry with a cloth and slice them thinly.<br \/>\nHeat the extra virgin olive oil in a pan with a clove of garlic. Add the mushrooms and cook over high heat for a few minutes, then reduce the heat and continue cooking until tender.<br \/>\nSeason with salt and pepper, remove the garlic, and add the chopped parsley.
